FOR THE TRES LECHES CAKE:
6 large egg (yolks and egg whítes separated)
2 cups flour
1 tablespoon baking powder
¼ teaspoon salt
2 teaspoons vanilla extract
½ cup milk
⅔ cup sugar
FOR THE CREAM CHEESE LAYER:
1½ cups cream cheese
⅓ cup powdered sugar
1 cup whipping cream
FOR THE MILK SAUCE:
1 ½ cups milk
2 tablespoons instant coffee
3 tablespoons rum
1 cup chocolate shaving and fresh strawberry, for topping
TO MAKE THE TRES LECHES CAKE:
Preheat the oven to 375°F (190°C). Prepare a 9×9-inch baking pan, line it with parchment paper, let it overhang to the outside of the pan.
Into a large bowl, add the yolks, flour, baking powder, salt, vanilla and milk, whisk until combined.
Into a separate bowl, using an electric hand mixer, beat the egg whítes and sugar until stiff peak forms. To whip the meringue successfully, the bowl and the whisk attachment must be clean.
Then fold the yolk mixture into the meringue. Transfer to the baking pan, bake for 20 minutes or until a toothpick inserted into the center comes out clean. Cool on the rack for another 10 minutes.
TO MAKE THE CREAM CHEESE LAYER:
In a mixing bowl, with medium high speed whisk the cream cheese and powdered sugar until smooth and there are no clumps left.
Add the whipping cream and continue to beat until light and fluffy. Transfer into a pippin bag.
TO MAKE THE MILK SAUCE:
In a big measuring cup, put warm milk, instant coffee and rum and stir to dissolve all the coffee.
Poke multiple holes on the cake using a fork. Then carefully drizzle all the milk sauce onto the cake.
Pipe the cream cheese on top of the cake, using a spatula to even the surface. Then cover the cake with chocolate shavings and top with fresh strawberries. Store in an airtight container for 1-2 days.
