Do you love Chocolate Cherry Cake? The combination of cherries and chocolate chips is one of my favorites in a dessert. Everyone who takes a bite of this cake is going to love it. Cherry Garcia Cake is stacked with layers of vanilla cherry cake and cherry icing. This cake looks like it came straight from a bakery!
This cake is moist and delicious and full of cherry flavor. Every bite of this easy dessert is filled with sweet cherries and chocolate. While it might seem like the list of ingredients is long, it is easy to make. Next time you need a summer dessert, consider making this amazing Garcia cherry cake. Everyone will devour it!
2 Cup Semi Sweet Chocolate Chips
3 Cup Chopped Maraschino cherries
2 Boxes of french vanilla cake mix
1 tsp pure vanilla extract
1 Cup unsalted sweet cream butter softened
2 Cup whole milk
6 large eggs
4 Cup Powdered sugar
3 tsp Cherry extract
2 Cup unsalted sweet cream butter softened
3-6 drops red gel food coloring
6 Cup powdered sugar
3-6 tbsp heavy whipping cream
3 Cup unsalted sweet cream butter softened
3 tsp vanilla extract
½ Cup Maraschino cherries with stem
1 Cup mini chocolate chips
Chocolate shaving sprinkles
Preheat the oven to 350 degrees. Grease and flour three 9 inch round cake pans. Set aside.
Beat all cake ingredients together with a standing mixer until combined and well mixed.
Add the chopped cherries and chocolate chips and mix well.
Pour the batter evenly into the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
Remove cakes from the oven. Allow to cool in pans for about 10 minutes, then remove to finish cooling on wire racks.
Combine all cherry frosting ingredients in a standing mixer and beat for 5-7 minutes, or until smooth and blended.
Pour into a bowl and put it aside.
In a standing mixer, beat together the vanilla frosting ingredients for 5-7 minutes, until the frosting is smooth and stiff peaks have formed.
Fill the piping bag halfway with white frosting and set aside.
Assembling the cake
Once the cakes are cool, level the tops if necessary.
Place one cake layer on a cake stand or serving plate. Spread 1 ½ C of the cherry frosting onto the top of the cake.
Place the second cake layer on top and apply another ½ C of the cherry frosting.
Place the remaining cake layer and spread a thin coat of remaining white frosting all over the cake and frost the entire cake.
Sprinkle the mini chocolate chips around the bottom of the cake.
Pipe along the top of the cake with dollops of frosting.
Top the dollops with chocolate shavings and Cherries.
