Strawberries are my first love, while sweet and moist brownies are my second. As a result, I decided to try out the Strawberry Brownies recipe today in order to completely appreciate the exquisite flavor. And the fantastic product has a thick texture, a rich chewy taste, and is notably full of strawberry flavor thanks to the dried strawberry powder in the recipe. The sweet and fragrant cheese sauce on top adds a new dimension to the cake’s appeal. More importantly, this cake has a charming light pink color that will make it the ideal choice for Valentine’s Day or any spring celebration!
FOR THE STRAWBERRY BROWNIES
1 (.5-ounce) package freeze-dried strawberries
1 1/3 cup all-purpose flour
3/4 cup unsalted butter, melted
2/3 cup granulated sugar
1/4 cup milk
1 large egg
1 egg yolk
1 teaspoon fine sea salt
1 teaspoon baking powder
1 teaspoon pure vanilla extract
3-4 drops red food coloring (optional)
FOR THE CREAM CHEESE GLAZE
2/3 cup powdered sugar (for a thicker glaze, use only a 1/2 cup of sugar)
4 ounces room temperature cream cheese
MAKE THE STRAWBERRY BROWNIES
Step 1: Preheat the oven to 350 degrees F (177 degrees C), grease and flour a 9 x 13-inch baking dish, and line it with parchment paper, leaving a 1-inch overhang. Remove from the equation.
Step 2: Place the dried strawberries in the bowl of a food processor and pulse until a fine powder forms. For the cake recipe, measure out 1/3 cup.
Step 3: Combine flour, strawberry powder, baking powder, and salt in a mixing basin; stir well to combine, then strain through a sieve to obtain a smooth powder combination.
Step 4: Place the butter and granulated sugar in the bowl of an electric mixer fitted with a stirrer and beat on high until the mixture is smooth and creamy.
Step 5: Reduce the mixer speed to low and add the eggs, egg yolks, and vanilla extract to the butter sugar mixture in step 4, mixing well until the mixture is uniform.
Step 6: Toss in the milk and food coloring with the mixture from step 5 and stir well until thoroughly combined.
Stage 7: Reduce the speed of the mixer to low and gradually add the dry flour mixture from step 3 to the wet mixture from step 6, mixing well until the mixture is thoroughly combined (be careful not to over mix).
Step 8: Evenly pour the cake batter into the previously prepared cake form, flattening the dough surface with a spatula.
Step 9: Bake the cake for 20 to 40 minutes in a preheated oven, or until the center of the cake tightens. Insert a skewer into the middle of the cake; if it comes out clean, the cake is done.
Step 10: Remove the cake from the oven and allow it to cool completely in the mold on a wire rack.
MAKE THE CREAM CHEESE GLAZE
Step 1: In the bowl of an electric mixer fitted with an egg beater, combine the cheese and sugar and beat until smooth and well combined.
Step 2: Spread the glaze you just produced in step 1 on the cooled cake, making sure it’s equally distributed, then cut the cake and enjoy.
