Chocolate Malt Cake – tender, lightly flavored chocolate cake layers, chocolate malt buttercream, crushed malt balls and vanilla malt buttercream. If you love chocolate, this chocolate layered cake with chocolate frosting topped with chocolate ganache is a total dream come true!
For the cake
1 ¾ cups/220 g flour
¾ cup/90 g cocoa
1 cup/ 250 ml whole milk
2 cups/400 g granulated sugar
½ cup/ 125 ml vegetable oil
1 tsp salt
2 eggs large
1 ½ tsp baking powder
1 ½ tsp baking soda
2 tsp vanilla
For the malted chocolate frosting
½ cup chocolate Ovaltine
4 cups 500 g confectioners’ sugar
2 ¼ cups 510 g unsalted butter, room temperature
2 teaspoons pure vanilla extract
⅓ cup 80 ml double cream/whipping cream
¼ cup 60 ml creme fraiche or sour cream
9 ounces 265 g good quality milk chocolate

For the decoration
lemon thyme leaves
2 chocolate bunnies
Preheat your oven at 350F / 180C, add butter and line the 8″/ 20cm cake tray with parchment paper.
Combine flour, sugar, cocoa, baking powder, baking soda and salt in a large bowl until combined. In a separate bowl, mix eggs, milk, oil and vanilla essence. Add wet ingreďïệnts to dry ingreďïệnts and beat with electric mixer until well incorporated.
Divide evenly among 3 pans and bake in the preheated oven for 25 minutes until a toothpick comes out clean. Baked 2 layers together and then the third one later.
Allow to cool in the pan for 10 minutes, then remove the cake and let it cool completely.
Malted chocolate icing:
Combine all ingreďïệnts except the melted chocolate in a food processor and pulse until well combined.
Combine all ingreďïệnts except the melted chocolate in a food blender and pulse until well combined. Open the lid and check to make sure the ingreďïệnts on the bottom are combined, mix well with a spoon if necessary.
Add the melted chocolate and beat a few more times until the frosting is creamy and blendable.
Use immediately to fill the layers and cover the cake.
Use sprinkling lemon thyme leaves for “grαѕѕ” and “ivy” on one side and place the chocolate rabbits on top.
