The best combination of chocolate and strawberries ever! The chocolate cake is perfect, super moist and super rich, with chocolate frosting, chocolate ganache, and sweet strawberries just how I like it.
I used my ultimate chocolate cake recipe here which is really simple and turned it into a wonderful chocolate strawberry cake.
This chocolate cake with strawberry is perfectly fluffy and the chocolate ganache adds a wonderful richness to it. Not to mention the beauty and refreshment added by fresh strawberries.
If you want a bit more chocolate flavor in your cake, add a handful of chocolate chips in the batter. Alternatively, you can soak some raisins into red wine or into rum and add them in the batter, which will take your cake to the next level.
For The Cake
1 1/2 cup flour
1 tsp baking powder
1 1/2 tsp baking soda
1 1/2 cups granulated sugar
3/4 cup buttermilk room temperature
3/4 cup processed cocoa powder sifted
1 tsp salt
1/4 cup vegetable oil
1 tsp salt
3/4 cup hot strong brewed coffee
2 large eggs
2 tsp vanilla
For the Frosting
2 cups powdered sugar
1 cup unsalted butter at room temperature
1 cup semi-sweet chocolate chips melted and cooled to room temperature
1 teaspoon vanilla extract
For the Ganache
3/4 cup heavy cream
3/4 cup semi-sweet chocolate chips or chopped chocolate
24 ounces strawberries
To make the chocolate cake
Grease and line bottoms two 8″ round baking pans with parchment. Preheat the oven to 350F.
In the bowl of a stand mixer, add all dry ingredients and stir to combine.
In a medium bowl, add all wet ingredients and beat well.
Add wet ingredients to dry and mix on medium for 2-3 mins. Batter will be very thin.
Pour batter into prepared pans.
Bake for 30-35mins until a cake tester comes out mostly clean.
Allow it cool 10 minutes in the pans then remove onto a wire rack to cool completely.
To make the frosting
In the bowl of a stand mixer, beat the butter and powdered sugar on medium speed for about 3-4 minutes until light and fluffy. Mix in the vanilla.
Add the cooled melted chocolate and beat on medium speed until the frosting is smooth and creamy.
To make the chocolate ganache
Add the chocolate to a medium bowl. In a small saucepan, heat the cream over medium heat just until it bubbles around the edges.
Pour cream over the chocolate chips. Allow the mixture to stand for 30 seconds before stirring until the chocolate melts and a smooth ganache forms, around 1-2 minutes. Allow the ganache to cool for 5 minutes.
To assemble the cake
Place the one layer of cake on a cake stand and top and spread frosting over the bottom layer of the cake.
Slice 1 cup of strawberries lengthwise and place them on top of the frosting. Place the second cake carefully on top of the strawberries and gently press down.
Pour the chocolate ganache on top of the cake and work very quickly, spread it over the top and sides of the cake.
Allow around 15 minutes for the ganache to set. Remove the stems off 10 beautiful strawberries and arrange them on top of the cake, stem side down. Gently press them into the ganache to allow them to stand up. Serve cut into pieces!
