How To Make Samoa Cupcake

INGREDIENTS:

FOR THE CUPCAKES:

½ cup butter, room temperature

½ cup sugar

½ cup oil

2 eggs, room temperature

¾ cup flour, sifted

1¼ cup baking powder

1¼ tablespoons milk, room temperature

FOR THE FROSTING:

½ cup butter, room temperature

2 cups icing sugar

1 teaspoon vanilla extract

2 tablespoons whipping cream

2 cups melted chocolate

How To Make Samoa Cupcakes

DIRECTIONS:

TO MAKE THE CUPCAKES:

1. Preheat the oven to 300°F (150°C). Prepare a cupcake pan with cupcake
liners.

2. In a large bowl, beat the butter and sugar with an electric mixer until light and fluffy. Add 2 eggs and beat well, add the flour, baking powder and milk then mix until combined.

3. Use an ice cream scoop or a piping bag to divide evenly in each cupcake liner. You will have about 6 cupcakes for this recipe.

4. Bake for about 20 minutes until an inserted toothpick in the center of the cupcakes comes out clean.

TO MAKE THE FROSTING:

1. In a mixing bowl, add butter, icing sugar, vanilla, beat until light and fluffy, add whipping cream and continue to mix until you reach the desired consistency. Transfer to a piping bag.

2. Dunk the top of the cupcake in 2 cups of melted chocolate, pipe frosting on top, sprinkle with toasted coconut flakes and drizzle caramel and chocolate sauce on top.

3. The cupcakes can be stored in an airtight container for up to 4 days.
