Coco Bread is especially good with a simple piece of grilled fish and some spicy mayo. This recipe is super simple and easy, which is great for breakfast, lunch, snacking or even as dinner!
3½ cups flour
2 tablespoons sugar
2¼ tablespoons yeast
1 teaspoon salt
1 cup milk
3 tablespoons butter, room temperature
1. In the bowl of a stand mixer, add bread flour, sugar, yeast, salt, an egg and milk. Mix on medium speed with a dough hook, slowly add the butter in, mix until fully combined into a ball of dough that does not stick to the sides of the bowl.
2. Lightly grease a large bowl with oil spray and put the dough in, cover with plastic wrap and let rise in a warm place for about 2 hours or until doubled in size (give the dough enough time to rest so it is easier to roll flat).
3. Flour the work surface, divide the dough into 12 equal pieces. Roll them to form a ball of dough, using a rolling pin to flatten them out, brush with melted butter and fold in half. Transfer to a baking sheet lined with parchment paper, brush the top with melted butter.
4. Preheat the oven to 350°F (180°C) then bake for 20 minutes and you’re done. Enjoy!
