There are many different types of cream cakes today but condensed milk cakes are still popular thanks to its special taste. Medovik is made from honey, eggs, sugar, butter, and cream. The cake is a combination of layers of biscuits almost like a sponge soaked in honey and sour cream. HONEY CAKE LAYER
4 1/4 cups (550g) all purpose flour, sifted
1 tsp (5g) vanilla extract
2/3 cup (135g) sugar
1 tsp ( 6g) baking soda
1/2 cup (113g) butter
1/3 cup (120g) honey
1/2 tsp (3g) salt
SOUR CREAM FROSTING
2 cups (500g), whipping cream 35% fat, chilled
2 cups (500g) sour cream, 25% fat
2 tbsp (40g) honey
2/3 cup (80g) powdered sugar
1 tsp (5g) vanilla extract

PREPARE HONEY CAKE LAYERS
Step 1: Start the furnace at 350F (180C).
Step 2: In a small pot add sugar, butter, honey and mix well then heat on the stove on medium heat when the mixture boils down to low heat continue to boil for 4-5 minutes until fragrant and mixed. bold color transitions.
Step 3: Add baking soda to the mixture in step 2 and beat until the mixture is foamy and faded, then turn off the heat and put the pot down.
Step 4: Add salt and vanilla to stir well then let cool mixture at step 3 for 4-5 minutes during which prepare the eggs.

Step 6: Slowly add the beaten eggs to the honey butter-sugar mixture in step 4 and beat continuously until the mixture blends together.
Step 7: Sift the flour slowly into the mixture and stir well until the liquid becomes a thick mixture and has a certain consistency until the dough can be kneaded.
Step 8: Transfer the dough to a flat surface with the dough into a long block, then divide the mixture into 8 equal parts.
Step 9: Knead the dough into a circle and roll flat on the parchment so that each piece is 1-2 mm thick, then use a mold to cut the cake into circles 8 inches (20cm) in diameter.
Step 10: Use a fork to poke the cake dough to keep the parchment and bake for 7 minutes in the prepared oven until the cake is golden, then take the cake out of the oven and let it cool. Do the same with the rest of the dough to get all 8 pieces of cake.
Step 11: Bake the remaining cuts for about 5-6 minutes until golden brown. Leave them cool completely.
PREPARE SOUR CREAM FROSTING
Step 1: In the bowl, add sour cream, powdered sugar, and honey, vanilla, and mix well.
Step 2: In another bowl, use a 35% fat whipping cream whipping mixer until hard peaks form.
Step 3: Add the cream in step 2 slowly into step one mixture and fold the mixture evenly to get sour cream.
Step 1: Add a little frosting on the serving plate. Put a layer of honey cake on top. Add some parchment under the first layer to keep the disc clean when a̾s̾sembling.
Step 2: Put the cream on top of the cake then cover the cake on top, repeat this process until you’ve used all the baked cake layers or, depending on your preference, reduce the number of layers.
Step 3: Cover the top layer and the edges of the cake with cream to make sure the sides are smooth
Step 4: Leave the cake in the fridge overnight for the soft layers.
Step 5: Crush the remaining baking parts of the cake then use them to decorate the cake.
