This was everyone’s favorite dessert! Art lived a full, sweet life, and this dessert is representative of just that. Loaded with delicious chocolate flavor, this pie is perfect for birthdays, lad̾i̾e ̾s nights, or special occasions.
½ cup all-purpose flour
¼ teaspoon baking powder
⅓ cup unsweetened cocoa powder, sifted
¼ teaspoon salt
1 cup granulated sugar
½ cup butter, melted and cooled
1 teaspoon vanilla extract
2 large eggs, room temperature
CHOCOLATE WHIPPED CREAM
½ cup confectioners’ sugar
½ cup cocoa powder
2 cups (476g) heavy whipping cream
1½ teaspoons vanilla extract
¼ cup butter, softened
⅓ cup granulated sugar
1 package cream cheese, softened
1½ cups semi-sweet chocolate chips, melted and cooled slightly
1½ cups (about 20) Oreo sandwich cookies, filling removed and crushed
6 tablespoons butter, melted
Line a 9×9-inch baking dish with parchment paper. Set aside
Melt the butter and leave it to cool.
Combine the sugar, cocoa powder, flour, salt, and baking powder.
Add the eggs, the vanilla and beat them well in a medium bowl. Slowly add and stir in the dry mixture you just made.
Pour melted butter into the brownie mixture and mix until well blended.
Pour batter into a baking dish and bake at 350°F for 20 minutes.
Take the cake out of the oven and let it cool.
Mix the Oreo cookie crumbs with the melted butter, use a fork to beat them until every crumb is butter-coated, as a glue to keep everything together.
Pour the coated Oreo crumbs into a 9-inch pie dish. Flatten the surface. Start at the center and work out and up the sides.
CHOCOLATE WHIPPED CREAM
Mix heavy cream at the lowest speed, and then gradually increase speed to medium. Stop the mixer when the cream starts to thicken.
Slowly add the cocoa powder and confectioners’ sugar and mix again, starting on low and gradually increasing to medium and then mix on high speed until the cream is thick and stiff. Reserve.
Add the chocolate chips in a microwave-safe bowl and heat for 20 seconds until the chips melted. Set aside.
Using a hand-held mixer, beat the cream cheese until creamy and smooth.
Combine the butter, sugar, and vanilla.
Cut the brownies into small, bite-sized pieces.
Fold in the melted chocolate chips, chocolate whipped topping, and most of the brownie pieces into the filling, reserving some for the topping.
Pour the filling into the Oreo crust.
Top with whipped topping.
Refrigerate for 3 hours before slicing and serving.
