You have options with this terrific cake. You can make a classic non-healthy cake or a healthier cake that tastes just like a traditional one. But why not make it as healthy as possible when it tastes just as great?!
2 cups whole wheat or spelt flour
1/2 cup cacao or cocoa powder
1 1/2 tsp baking powder
1 tsp baking soda
3 large eggs
1 cup maple syrup
2 cups plain regular or Greek yogurt 3%+ fat
1 tsp pure vanilla extract
1/4 tsp salt
1/3 cup cacao or cocoa powder
1/3 cup maple syrup
1 1/2 cups plain regular or Greek yogurt 2%+ fat
1/2 tsp pure vanilla extract
Preheat the oven to 350 degrees F. Place parchment paper in the bottom of two 8 inch round cake pans. Cut the paper so it fits well in the bottom circle of the pan. Spray the pan and parchment paper with nonstick cooking spray.
In a large bowl, whisk together flour, cacao powder, baking soda, baking powder, vanilla, and salt to combine. Set aside.
In the bowl of a stand mixer fitted with a paddle attachment, beat eggs and maple syrup for 30 seconds or until well incorporated.
Add flour mixture and whisk until smooth and well combined. Do not over mix but whisk until smooth consistency.
Divide the batter between the two pans. Bake for 27 minutes or until a toothpick inserted into the center of the cake comes out clean or with a few cooked crumbs attached.
Allow cakes to cool completely, about 45 minutes before inverting onto wire racks and peeling off parchment paper.
Make the frosting
In a large bowl using an electric mixer to whisk well yogurt, maple syrup, cacao powder and vanilla. Refrigerate until ready to assemble the cake.
Assemble the cake
Place the first cake layer on a cake plate or stand and spread 1/4 of frosting on it. Repeat with remaining layers.
Decorate however you wish. I grated a few candies on top, you could use sprinkles, fresh berries or icing sugar.
Cut into 10 slices, serve and enjoy!
