This layer cake recipe highlights the sweet goodness of fresh summer peaches, a favorite fruit to use in fruit cobblers, ice cream, and pound cakes. You will love the lightly cinnamon-spiced cake layers and the deep flavor that comes from the brown sugar. The real star of this dessert is the frosting, which is made with peach puree and rich browned butter. It’s light, delicious and so flavorful – such a big нιт!
3 cups flour
2 tsp baking powder
1 cup unsalted butter, at room temperature
1 tsp baking soda
1 cup C&H Granulated Sugar
1 cup C&H Golden Brown Sugar
1/2 tsp cinnamon
1/2 tsp salt
2 tsp vanilla extract
1 1/4 cups reduced fat buttermilk
4 large eggs, at room temperature
6 cups C&H Confectioners Sugar, sifted
3/4 cup C&H Golden Brown Sugar
6 oz full fat cream cheese
1 1/2 cups unsalted butter
1 1/2 tsp vanilla extract
3/4 tsp salt
2 medium peaches, thinly sliced
6 Tbsp peach jam
For the cake:
Grease and flour three 8-inch round cake pans. Set aside. Preheat the oven to 350°F.
In a medium bowl, add flour, baking powder, baking soda, salt, and cinnamon and mix well. Whisk butter and sugars in a large mixer bowl at medium speed until light and fluffy
Add vanilla and beat until combined. Add eggs one at a time and beat until incorporated. Reduce the speed to low and add flour in 3 additions, alternating with buttermilk.
Pour batter into cake pans. Bake until a toothpick inserted in the center comes out clean, the cakes are golden (about 22 to 24 minutes).
Allow cakes to cool in pans for 15 minutes, then inverting onto wire racks to cool completely.
For the frosting:
In a medium bowl, add butter, cream cheese, salt and beat on medium speed until combined. Next, add brown sugar, powdered sugar and vanilla; beat on low speed for 2 minutes. Chill frosting for 10 minutes .
Assemble the cake:
Place the first layer of cake on a cake plate or cardboard cake circle and top with about 1/3 cup of the frosting.
Arrange peach slices in a circular pattern over the peach jam.
Add the second, third layer of cake, then repeat another layer of frosting and peach jam, and peach slices. Then add a thin crumb coat of frosting to the outside of the cake and chill the cake for 15 minutes.
Finish it off with some sliced peaches and brown sugar crumble, if you like.
Chill frosted cake for 30 minutes before serving.
