1 and 3/4 cups (350g) granulated sugar
1 cup + 2 Tablespoons (133g) cake flour
1/4 teaspoon salt
12 large egg wh̾i̾t ̾es,at room temperature
1 and 1/2 teaspoons cream of tartar
1 and 1/2 teaspoons pure vanilla extract
Step 1: Preheat the oven to 375 degrees Fahrenheit.
Step 2: Puree the sugar in a blender or food processor, then set aside a cup for the next step; there will be some sugar left in the blender at this point, which we will give to the flour to produce. For the mixture to blend together, the cake and salt are finely ground 5-10 times.
Step 3: In a big mixing bowl, whisk together 12 egg wh̾i̾t ̾es and cream of tartar for around 1 minute on medium low, or until the egg wh̾i̾t ̾es and cream of tartar are soft and foamy. Then increase the heat to medium-high and gradually apply the cup of sugar you set aside in step 2. Continue to beat for another 5-6 minutes, or until soft peaks form, then add the vanilla extract and beat until the mixture is fully blended.
Step 4: Using the mixture from step 3, sift the dough slowly through the fine sieve, carefully beating each time to ensure that the mixture blends well and the cake does not get smooth or cake-like. excessively dense (not putting all the dough in the mixture at once will make it difficult to blend the cake ingreďïệnts). In several replenishment intervals, sieve and fold very slowly. When the dough is ready, pour it into an unglazed tube pan with a diameter of 9-10 inches, making sure to rub the pan on the stove to smooth the top.
Step 5: Bake the cake for 40-45 minutes, or until a toothpick inserted in the center comes out clean. The cake can swell during baking, so be sure to change the pan halfway through baking to ensure even cooking. Take the cooked bread from the oven and cool fully before turning it upside down on a zinc rack for about 3 hours. If the cake has cooled, loop a thin knife along the sides and softly tap the tray against the counter until it swells.
To decorate and enhance the taste of the cake, cover it with sugar, canďïệs, or cut it with a thin jagged knife, depending on your choice. A cake can be conveniently crushed with ordinary knives.
