No bake sweet Oreo cookie crust with cream cheese and whipped cream topping. This delicious recipe is sure to please everyone, from the little ones to grown-ups!

1/4 cup unsalted butter
20 (200 grams) Oreo cookies
1/4 cup granulated sugar
1 teaspoon vanilla extract
2 and 1/2 cups cream cheese
1 cup good quality semi-sweet chocolate
2 cups mini marshmallows
1 and 1/2 cup thickened or heavy cream
3/4 cup roasted peanuts
1/2 cup semi-sweet or dark chocolate, for decorating
Grease a 9 inch (23 cm) springform pan. Line base and side with baking paper.
Finely crush Oreo cookies in a food processor.
Place butter in a microwave-safe bowl. Microwave for 1 minute 30 seconds or until butter is melted.
In a bowl, mix together crushed Oreos and melted butter until well combined.
Put the mixture in the bottom of the prepared tin and press it down well. Then place it into the fridge.
In a large mixing bowl, beat well softened cream cheese, sugar and vanilla with an electric mixer until smooth and creamy.
Using an electric mixer, beat cream in another bowl until soft peaks form.
Place chocolate in a microwave-safe bowl. Microwave until chocolate is melted and smooth– give it a good stir.
Whip the chocolate into the cream cheese mixture until it is completely smooth.
Then fold carefully in the whipped cream.
Add 1 cup mini marshmallows and 1/2 cup roasted peanuts and stir through.
Spoon on top of Oreo cookie base. Smooth the top with the back of a spoon or a palette knife if you have one.
Cover loosely with alfoil and chill for at least 3 hours or even longer, overnight.
When ready to serve, sprinkle the remaining 1/2 cup roasted peanuts and 1 cup small marshmallows over the top of the cheesecake and lightly press them in.
Melt the remaining chocolate in the microwave, then drizzle the melted chocolate over the cheesecake using a spoon. Slice and serve!
