Several layers of moist chocolate cake with a hint of malt flavor are separated by a smooth and creamy chocolate malt frosting. Garnished and topped with malted milk balls, each slice in an homage to the chocolate malted milkshakes I loved as a kid. Here’s my Chocolate Malted Milkshake Cake Recipe. For The Cake
2 1/4 cups flour
1 tsp baking powder
1 1/2 tsp baking soda
3/4 cup unsweetened cocoa powder
1/2 tsp salt
1 1/4 cup sugar
3 large eggs
1 cup milk
1 cup canola oil
1 cup malted milk powder
1 cup sour cream
1 tsp vanilla extract
For The Chocolate Malt Frosting
1/2 cup unsweetened cocoa powder
1 cup butter, softened
1/2 cup malted milk powder
3/4 cup heavy whipping cream
5 cups powdered sugar
malted milk balls, for garnish
To Make The Cake
Preheat the oven to 350º F. Prepare three 9-inch cake pans by spraying with baking spray or buttering and lightly flouring.
Add the flour, sugar, cocoa, baking soda, baking powder, and salt to a large bowl or the bowl of a stand mixer. Whisk through to combine or, using your paddle attachment, stir through flour mixture until combined well.
Whisk together the milk and malt powder in a small bowl until completely combined.
Add the milk mixture to the flour mixture and mix together on medium speed until well combined. Mix in the sour cream and vanilla extract, just until smooth.
Pour cake batter evenly between the three prepared cake pans. Bake for 20-25 minutes, until a toothpick or cake tester inserted in the center comes out clean.
Remove from the oven and allow to cool for about 10 minutes, remove from the pan and cool completely.
To Make The Frosting
In the bowl of a stand mixer fitted with a paddle attachment, beat the butter and cocoa powder until smooth.
Whisk together the cream and malt powder in a small bowl until evenly combined.
Gradually add in the powdered sugar, beat until everything is combined and the mixture has reached a silky consistency.
To Assemble The Cake
Place 1 layer of cake on a plate/ stand then spoon ⅓ of the frosting on top, spreading it into a smooth layer. Repeat with remaining cake layers.
Smooth the frosting over the entire cake and use any remaining frosting to pipe a simple design onto the cake.
Add a handful of chocolate flakes and some malted chocolate balls or mini eggs to complete the look.
Best eaten on the day it is made.
