No Bake Lotus Biscoff Cheesecake Recipe

Lotus Biscoff lovers you’re in for a treat! A creamy cheesecake with an airy, mousse-like texture that screams Lotus in every bite! It is so easy to make and doesn’t require an oven!




30 Lotus Biscoff Cookies (235g)*

6 tablespoons (3oz/ 85g) unsalted butter, melted


1 cup (237ml) heavy whipping cream, very cold

12⅓ oz (350g) cream cheese, at cool room temperature*

1 cup (260g) Lotus Biscoff spread (aka Speculoos or any cookie butter)*

⅔ cups (75g) powdered sugar

⅛ teaspoon salt


The remaining 140g (heaping ½ cup) of the Lotus Biscoff spread jar




Adjust oven rack to middle position and heat oven to 325°F (160°C). Line the bottom of a 9 or 10 inches springform pan with a round parchment paper.

Using a food processor, pulse the Lotus Biscoff cookies into fine crumbs. You can also place them in a large zipper lock bag and smash them with a rolling pin or meat mallet until finely ground.

Stir in the melted butter until evenly combined. Measure out ¼ cup (50g) of the mixture and reserve in a small bowl, cover with plastic wrap, and refrigerate until ready to use for garnish. Evenly spread the remaining crumb mixture to the prepared pan’s bottom, then press with a flat-bottomed drinking glass or measuring cup.

Transfer to the oven and bake until deepens in color and smells fragrant, about 8 to 9 minutes. (You can skip the baking step if you prefer, but it helps set the crust better and gives it a more aromatic flavor and crisper texture). Allow to cool completely before filling. To speed things up, I like to cool it in the freezer as I work on the filling.



In a large, chilled bowl, beat the heavy whipping cream with an electric mixer on medium speed until stiff peaks form. Be careful not to over mix the cream. Transfer the whipped cream to a medium bowl and keep chilled in the fridge until ready to use.

In the same bowl and using the same mixer, beat together cream cheese, Lotus Biscoff spread, powdered sugar and salt until well combined and very smooth.

Using a rubber spatula, gently fold in the whipped cream into the cream cheese mixture, until uniform in color and no white streaks remain. The mixture should be very stable and cloud-like, but not loose at all.

Scrape the filling to the cooled cookie crust and use an offset spatula or the back of a spoon to spread into an even layer and smooth the surface.

Cover tightly with plastic wrap and refrigerate until set, 5 to 6 hours or overnight.



Use a sharp knife to loosen the chilled cheesecake from the rim of the springform pan, then remove the rim. Use a thin, wide spatula, cake lifter or the removable bottom of a tart pan, to lift the cake off of the bottom; the parchment round should slide right off. Transfer to a serving platter.

Place the remaining Lotus Biscoff spread in a microwave-safe bowl, and heat in the microwave until very fluid and melted, about 40 seconds.

Use a piping bag (or small zipper lock bag) with the end snipped off to drizzle some of the melted Lotus Biscoff around the edges to get that dripping effect. Then pour the remaining spread all over the surface, quickly spreading it out into a smooth, even layer.

Put back the cheesecake in the refrigerator to set the topping; at least 10 minutes. Sprinkle the sides of the cake with the reserved cookie crumb mixture. For neat slices, dip a sharp knife in hot water, wipe it dry, then slice. Repeat, wiping the knife clean between each slice. Place the remaining 2 Lotus cookies decoratively on top. Garnish the platter with berries, if desired.
Serve cold, straight for the fridge. Cover and refrigerate leftovers for up to 5 days or freeze for up to a month, maybe longer.



This recipe requires an entire 400g jar of Lotus Biscoff Spread. 260g goes into the filling and the remaining 140g is used for the topping.

You’ll need an entire 250g packet of Lotus cookies. The packet contains 32 cookies; 30 to grind up for the crust and crumbs around the rim, and the remaining 2 can be used to decorate the top.
For the cream cheese, Kiri Creamy was used in this recipe (the one in the tub, not the squares). If using Philadelphia, be sure to use brick-style, not the spreadable type in the tub. Whatever brand you choose, be sure it’s full fat.

Combine all of the ingredients in a bowl. Allow the mix to set in the fridge/ freezer for 20 minutes approx.


Roll the mix into 1 or 2 tbsp balls. If the mix starts to soften put them back in the freezer for about 5 minutes, then roll again to create a smooth round shape.


Melt some vegan dark chocolate, coat the balls in the chocolate and top with some sea salt. Store in the fridge.

In a stand mixer with a paddle attachment, beat together the ½ cup butter and sugar for a few minutes until it is light and fluffy. Add eggs one at a time. Then mix in the vanilla and salt.


In a separate bowl, sift together the flour, cocoa powder, and baking powder.

Slowly add the flour mixture to the wet mixture in the stand mixer until well combined.

The perfect finishing touch for this mousse is simple and delicate whipped cream and thin shavings of dark chocolate. Not only does it make it look elegant and add visually appealing variation but it just compliments and finishes it off as it should be.

Of course this is no diet friendly menu item and low calorie dessert but it’s worth every bit of it. All things in moderation.


You’ll only need 5 ingredients for this recipe!

Heavy cream – this rich ingredient makes the mousse light and fluffy and amazingly decadent.

Egg yolks – this thickens up custard mixture in the mousse and boosts richness.

Granulated sugar – you can adjust this slightly to taste.

Vanilla extract – I usually like to add a fair amount of vanilla to chocolate desserts. It compliments those flavors so nicely.

Bittersweet chocolate – use chocolate baking bars or other good quality chocolate bars.

Sea salt (optional) – regular table salt works fine too. You only need to add a pinch or two, and honestly it can even be omitted. It just picks up the flavors a bit.



4 large egg yolks

¼ cup (50g) Youlks

2 cup (475ml) heavy cream, divided, plus more for topping if desied

1 pinch sea salt

2 tsp (10ml) vanilla extract

7 oz. bittersweet chocolate, chopped small



In medium mixing bowl using an electric hand mixer whip together egg yolks and granulated sugar on high speed until pale and fluffy, about 2 minutes.

Warm 3/4 cup of the heavy cream and salt in a 2-quart saucepan on the stovetop over low heat (don’t let it boil).

While whisking egg mixture slowly pour in warm cream mixture to temper egg yolks. Then pour combined egg yolk and cream mixture back into saucepan.

Cook over low heat, whisking constantly, until mixture thickens just slightly and reaches 160 degrees on an instant read thermometer (this usually takes about 3 – 5 minutes). If you notice any small lumps strain through a sieve and return to saucepan.

Off heat add in chocolate and vanilla. Stir well until chocolate is melted.

Pour mixture into a clean medium bowl, cover and chill, stirring about every 10 – 15 minutes until it reaches 70 degrees (or no longer warm), about 30 – 40 minutes total.***

Whip remaining heavy cream until very stiff peaks form.**** Fold whipped cream into chocolate mixture until combined.

Pipe or spoon into dessert cups. Chill 2 hours. Top with sweetened whipped cream if desired and garnish with shaved or grated chocolate.



You can definitely make this ahead, in fact it’s smart to do so. It will give the mousse a chance to firm up and set, and it’s best served cold so it’s good to allow time for that.

Just cover the dessert dishes with a little plastic wrap before refrigerating, so that the mousse doesn’t dry out as it chills.



This chocolate mousse can be left out at room temperature for an hour or so, but it is really best served cold.

It will keep in the fridge (covered) for around a week.

I think it’s best when it’s relatively freshly whipped, but you could probably get away with freezing it too. I have not done so myself, but I’m imagining it wouldn’t be much different than this no-churn chocolate ice cream.

1 1/2 cups All Purpose Flour

1 tsp Baking Soda

1/2 tsp Salt

1 cup Sugar

1/3 cup Unsweetened Cocoa Powder

1 1/2 tsp White Vinegar

1 tsp Vanilla Extract

1/3 cup Vegetable Oil

1 cup Cooled Coffee or Water I use 1/2 and 1/2




Preheat the oven to 350ºF. In a large bowl, stir together the flour, sugar, salt, baking soda, and cocoa powder until well combined.

Add 1 cup water to a liquid measuring cup, then add the vanilla extract and vinegar to the water.

Add the oil to the bowl of dry ingredients, followed by the water mixture. Stir until the chocolate cake batter is mostly smooth. Make sure no dry flour remains on the bottom of the bowl.

Pour the cake batter into an 8×8″ or 9×9″ baking dish. Transfer the baking dish to the oven and bake the cake for 35 minutes.



If using the chocolate icing, let the cake cool for at least an hour after baking before adding the icing.

Wait until the cake is cool, then prepare the icing. Add the powdered sugar, cocoa powder, and vanilla extract to a bowl. Begin adding water, 1 tablespoon at a time, until it forms a thick but pourable icing (about 3 Tbsp total). If you let the icing sit, it may begin to dry, but you can add a splash more water to make it moist again.

Pour the icing over the cooled cake and spread until the cake is evenly covered. Slice the cake into 9 pieces and serve.



*Use any neutral cooking oil of your choice, like canola, vegetable, grapeseed, safflower, corn, or avocado oil.

**Any light vinegar will work, like white vinegar, rice vinegar, or apple cider vinegar.

7 easy ways to remove puffiness

Sleeping on your back: According to Cosmopolitan, sleeping on your back will prevent fluid from accumulating under your eyes. This keeps your eyes from puffy the next morning. In addition, sleeping on a pillow cover made of silk material works to reduce friction, making it easy to fall asleep.


Cut down on alcohol and salty foods: Alcohol and foods high in salt are the culprits of dark circles, puffy eyes under the eyes. Consider using alcohol and salt in moderation to protect your health and skin.


Putting cucumbers or potatoes: Cucumbers are used a lot in beauty. Cucumbers have soothing properties, phytonutrients that help reduce inflammation and hydrate. Applying cold cucumber under the eyes can reduce swelling, and reduce puffiness effectively. Potatoes have the same effect. You cut cucumbers, potatoes that have been refrigerated into thin slices, then apply on eyes for 10-15 minutes.


Get enough sleep: If your eyes were puffy in the morning, chances are you were sleep deprived the night before. When the body doesn’t get enough sleep, the activity of the hormones responsible for water regulation is disrupted. This leads to eye puffiness and swelling due to fluid retention.


Eye massage: Massage includes many movements to support fluid drainage, stimulate blood circulation. To massage your eyes, use your little finger or ring finger starting at the inside of the eye, then moving outwards. In addition to using fingers, you can massage the eyes with jade rollers.


Use eye cream: In addition to following a reasonable resting and diet, you can use eye cream to remove puffiness or dark circles. There are a number of eye creams containing vitamin C to help brighten the skin, green tea, aloe soothes, or caffeine that shrinks and tightens the skin.

Creamy Mango-licious Baby Food Puree

This 5-minute Mango Baby Food Puree is a great way to introduce babies to the magical taste of one of the world’s healthiest fruits – MANGOS!



2 cups fresh or frozen mango, deseed, peeled and roughly chopped

1 banana

1 pinch nutmeg (optional)


Place the mango, banana and nutmeg (if using) into a blender or food processor.

Puree for 1 minute or until completely smooth. If your mango is not ripe enough, you might need to add in up to a 1/4 cup of water while blending to get the right consistency.

Serve or freeze for later.


Age: 4+ months

Yield: 10 ounces

Additional Spices: Feel free to also add in a pinch of cinnamon, cloves, mild curry powder, mint, basil or fresh ginger before blending.

Additional Add-Ins: You can also add in a handful of raspberries, a spoonful of full-fat plain Greek yogurt, a splash of canned coconut milk or even a 1/4 cup of chopped spinach to this recipe for more delicious meal options.

Storage: Fridge – store in an airtight container in the fridge for 3-4 days. Freezer – can be frozen for up to 4 months


Pumpkin Baby Puree

This Pumpkin Baby Food Puree is a creamy and flavorful way to introduce baby to the tastes of the season!



1 small pumpkin, pie or sugar pumpkin variety

1 tsp olive oil (optional)

1/2 tsp fresh thyme or sage, roughly chopped

1-2 cups liquid – water, breast milk, formula or stock


Heat oven to 350 degrees. Line a baking sheet with parchment paper or silicone mat.

Cut up the pumpkin. Start by slicing off the top off the pumpkin, then cut lengthwise down the middle until you have 2 halves of a pumpkin.

Scoop out the seeds and strings. Don’t be too obsessed with getting all the strings out, they will puree nicely with the rest of the pumpkin.

Chop the pumpkin into smallish pieces and place onto a baking sheet, skin down. Brush on the olive oil, if using.

Roast in the oven for 45-60 minutes or until a fork can pierce the very tender flesh. Set aside until cool enough to handle.

Peel the skin away from the pumpkin.

Place the pumpkin inside a food processor or blender. Add thyme and start blending for 1-2 minutes, adding the liquid in 1/4 cup increments until you get the desired consistency. I had to add in 1 cup of water to the puree pictured.

Serve or freeze for later.


Age: 4 months and up

Yield: 25 ounces

Additional Spices: Feel free to use the following spices instead of the thyme – 1/2 tsp of cumin, 1/4 tsp of nutmeg, 1/2 tsp of cloves, 1 fresh garlic clove, 3-4 basil leaves, 1/2 tsp chopped rosemary or even a big pinch of fresh ginger.

Storage: Fridge – store in an airtight container in the fridge for 3-4 days. Freezer – can be frozen for up to 4 months

Butternut Squash Baby Food

This homemade Roasted Butternut Squash Baby Food Puree is not only full of calcium, folate, vitamin A and fiber but it is also a deliciously smooth way to introduce butternut squash to your baby!



1 butternut squash

1 tsp fresh thyme or rosemary, roughly chopped

1-2 tsp olive oil (optional)

1/2-1 cup liquid (water, breast milk, formula, stock or bone broth)


Heat oven to 450 degrees F. Line baking sheet with a silicone mat, tin foil or parchment paper.

Cut butternut squash in half, deseed and place flesh side up, skin side down. Optional – Feel free to drizzle the squash with 2 teaspoons of olive oil for some added healthy fat.

Place the baking sheet into the oven and bake for 45-60 minutes or until you can easily prick the squash with a fork.

Let cool until you can handle the squash with your hands. Scrape the flesh off of the skin and place in a blender or food processor.

Add the thyme or rosemary to the butternut squash.

Turn on the blender or food processor and puree, adding liquid in 1/4 cup increments until you have the desired consistency. I had to add in 3/4 cup of water to my puree shown below.

Serve or freeze for later.
